
Cinnamon Roll Pancake
A fun, shareable brunch idea that the whole family will love!
Servings: 6
Ingredients
- 2 c Pancake Batter (use any mix you like and make according to directions on the packaging)
- 1/2 c Unsalted Butter
- 1 c Dark Brown Sugar
- 2.5 tbsp Cinnamon
- 4 oz Cream Cheese Softened
- 3/4 c Powdered Sugar
- 1 tsp Vanilla Extract
- 1/2 tbsp Milk
Instructions
- Preheat oven to 350 degrees. Prepare 10” round pan by spraying generously with baking spray and set aside.
- Mix up your favorite pancake mix according to the directions on the box (I use Kodiak Cake mix) and pour into your generously greased pan. I used a 10” round pan.
- To make cinnamon sugar filling, mix together melted butter, dark brown sugar and cinnamon.
- Spoon mixture on top of pancake batter and then take a butter knife and swirl mixture around.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- While your pancake is baking, make icing by beating together softened cream cheese, powdered sugar, milk and vanilla extract until smooth.
- Remove pancake from oven and while still warm swirl your cream cheese icing on top, cut into slices and serve!
