Preheat oven to 350 degrees. Prepare 10” round pan by spraying generously with baking spray and set aside.
Mix up your favorite pancake mix according to the directions on the box (I use Kodiak Cake mix) and pour into your generously greased pan. I used a 10” round pan.
To make cinnamon sugar filling, mix together melted butter, dark brown sugar and cinnamon.
Spoon mixture on top of pancake batter and then take a butter knife and swirl mixture around.
Bake for 25-30 minutes or until a toothpick comes out clean.
While your pancake is baking, make icing by beating together softened cream cheese, powdered sugar, milk and vanilla extract until smooth.
Remove pancake from oven and while still warm swirl your cream cheese icing on top, cut into slices and serve!
