Bunny Cookie Cake

Ingredients

  • 1 cup Unsalted Butter, Melted
  • 1 cup Dark Brown Sugar
  • 2 tsp Vanilla Extract
  • 2 Eggs, Room Temperature
  • 1 tsp Baking Soda
  • 3.4 oz Instant Pudding Mix, Vanilla
  • 2 cup Chocolate Chips
  • 1 tsp Salt
  • 2 cup All Purpose Flour
  • Pastel Chocolate Candies for Bunnies

Instructions

  • Preheat oven to 350 degrees.
  • Prepare 10” round baking pan by spraying with baking spray. Set aside.
  • In a microwave safe bowl, melt butter.
  • In a large bowl, add melted butter and dark brown sugar and whisk together until smooth.
  • Beat in eggs one at a time then mix in vanilla extract.
  • Add in pudding mix, salt and baking soda and mix until combined.
  • Add flour and gently mix until just incorporated.
  • Add in chocolate chips and fold in gently.
  • Press dough into prepared baking pan and press down to create an even layer.
  • Before baking add your chocolate candy bunnies. In sets of 3 chocolate candies, place one laying down and 2 on their sides to create the “ears”. Add as many bunnies as you’d like!
  • Bake 25 minutes or until edges are slightly brown and toothpick comes out clean.
  • Allow to cool completely then remove cookie cake from pan. 
  • Optional: add frosting to perimeter of cookie cake
