This is an easy, flavor-packed dinner made with shredded chicken, peppers, and salsa, all simmered together for a simple, hands-off meal!

Crockpot Chicken Fajitas
Ingredients
- 2 lbs Chicken Breast boneless & skinless
- 1 packet Fajita Seasoning 1 oz each
- 1 15.5 oz Red Salsa choose your favorite
- 3 Bell Peppers (any color) deseeded & sliced
- 1/2 Yellow Onion halved & thickly sliced
- 1 Lime juiced
- Tortillas flour or corn
- Chopped Cilantro optional for garnish
- Avacado optional for garnish
- Sour Cream optional for garnish
Instructions
- Place the chicken breasts in the bottom of your slow cooker.
- Sprinkle the fajita seasoning evenly over the chicken, then pour the salsa on top, making sure the chicken is well coated.
- Cover with the lid and cook on LOW for 4–6 hours or HIGH for 3–4 hours, until the chicken is cooked through and fork-tender.
- Halfway through cooking, add peppers, onion, and lime on top.
- Once done, remove the chicken and place it on a cutting board. Slice into strips or shred with two forks.
- Return the chicken to the slow cooker and stir everything together so it’s coated in the flavorful juices.
- Optional: Garnish with cilantro, avocado, sour cream, or anything else of your choice! Enjoy!
